Back to school time is bittersweet for me, while I love the calmness of the no schedule summers I also love the rush of getting prepared for the upcoming school year. Along with organizing school supplies, and making sure everything is properly labeled with the children’s names, is making sure everything is stocked for lunchtime! In my children’s eyes, lunchtime is probably the most important part of the day.
My children have always been semi-picky eaters, and for this reason, I usually give them a variety of things they like. They have always been Bento Style eaters, and they probably don’t know what Bento Style is. A Bento Box is a single portion meal common in Japanese Cuisine that holds a variety of foods in a box-shaped container. On Tuesdays, our days are pretty packed; after school, we have about an hour to eat lunch then head to Occupational and Physical Therapy. Some days we eat at home, and others we eat on the go!
Even though lunch may be on the go doesn’t mean that it can’t be fun!
Recently, I made lunch for my children and we had fun Peanut Butter and Jelly Sushi Bento Boxes…
Peanut Butter and Jelly Sushi is VERY easy to make! And the kids LOVED a new way of eating their lunch!
PB & J Sushi Rolls
4 Tablespoons of Jif
4 Tablespoons of Smucker’s Strawberry Jam
4 Slices of Bread
Remove crust from bread. Flatten with Rolling Pin
Spread Jif Peanut Butter and Smucker’s Jam on each slice of Bread
Roll into tight spiral, and slice into smaller pieces
Prep Time: 4-5 Minutes
Yield: 2 Servings (Enough for Two Children)
My children LOVED these lunches! And we have actually made different variations of them since I made the first Bento Box. I love that PB & J give the little ones the power to get through the rest of their day!
